Byte Nutrition Science Inc has developed and patented a method for scanning a material (using real-time impedance spectroscopy), and using a machine learning system to predict the concentration of one or more molecules based upon the scan results. Among the many applications of this approach is an electronic means of non-invasively analyzing the vitamin and other nutritional content of foods including fruits and vegetables.

A New Commercial Opportunity

This technology can be applied by produce distributors to create value-added product lines such as high-vitamin-C oranges. This new capability to sort produce into value-added products is similar to the specialization of omega-3 eggs in the egg market. This technology can also be applied to selectively breeding plants without GMO at low cost and can be useful in many industrial processes that involve monitoring molecular concentrations in liquids.
